Clinton’s Story & Caribé™ Restaurant
My name is Clinton. Ever since I was a child I have always loved cooking with my Grandma (dHoris) and is always in the zinc makeshift smoke filled kitchen! Her influence stayed with me to this date! Clinton now runs Caribé™ ™ Restaurant & takeaway naming the takeaway after her > dHoris|Caribé™ to honour & share her legacy through her recipes with my own twist.
The story of Caribé™ began 29 years ago in the rustic countryside of Jamaica. Clinton’s passion was always creating flavourful and authentic food. By the age of 7, Clinton started making various concoctions and became the chef for his family while his parents were at work. As the years went by, Clinton spent a lot of time with his grandma and looked forward to her return from the weekly market because of the goodies/ingredients she would bring home which included fish, meat, vegetables and fruits unique to the Caribbean.
Clinton was always eager to help unpack, clean the raw meat, fish and marinade for his grandma. In those days, there were no refrigerators or freezers to preserve the food; so his Grandma preserved meat, fish etc. using all natural processes, salt and smoke. Clinton remembers massaging salt into the fish, pork, chicken and stringing them up in the ceiling of the makeshift zinc kitchen. After a few days, the meats, fish etc. would be well preserved with the first coat of marinade before adding a second portion of marinade before cooking. This is a synopsis of where Clinton’s grandma’s secret ingredients began.
Clinton has stuck to his homage and setup his own eatery preserving the memories and ingredients of his Grandma whom he learned so much from. Migrating to England early, Clinton studied and continue to do his catering for parties, weddings and birthday celebrations on weekends and bank holidays.
He did this out the back of his car boot with a gazebo and it is as they say… history. Clinton continued to pursue his dreams and started to attend festivals, catering for corporate events and carried on to own four mobile catering trailers and a catering van to expand his street food business. As he strive to realise his dream, he moved on to open his first brick and mortar restaurant in 2016 near Nottingham Castle, followed by a grab and go Kiosk in Nottingham City Centre 2019. Caribé™ is building its brand from strength to strength and we plan to expand out authentic flavours and cuisine to the masses and we endeavour to share our energy, fun, love and spirit of the Caribbean with you.
Our track record is a testament of our prospect for growth and expansion. We undoubtedly have something different to offer and this has been proven on many occasions at our sites in Nottingham and various events, even those associated with Mr Graham Swann’s (ex-England Cricketer) charity event that attracted over 1300 attendees whom we catered for.
How our franchise model works
Caribé™ franchise has three core models that are flexible and unique to suite the serious investor looking for a great concept. Our model prepares and delivers fresh authentic food onsite on the day.
The Kiosk concept, depending on the size is a great profitable unit with very low overheads. This concept can be coupled with a Caribé™ mobile Van Kitchen as an extension and mobile billboard to promote your franchise. Kiosks will get all stocks delivered onsite as required. Some kiosk can also conduct full prep and cook services onsite.
Our Mobile Van Kitchen can also pre-order stock for their weekly projections and events as well as prepare and cook fresh meals on the day as needed. This unique mobile billboard on wheels will constantly promote your franchise every day.
Our takeaway is a full service sit in and take-out concept with a larger menu option and more capacity. This option is more expensive but brings more return on investment.
We use 100% Halal meat and all our meat are pre-marinade for up to 3 days and completed its cooking journey onsite. This way we deliver a well-seasoned, well marinade with flavours oozing through your palate in every mouthful.
We make our own marinade, jerk marinade and bbq sauces which sets us apart from other franchises. We even make our own bottled cocktails that goes down very nice with our great tasting jerk chicken, curried goat and other dishes. All of which has gone through official microbiological testing and factory processing.
Who we are looking for
Franchisees must have some experience in the food and drink or retail sector
Have a minimum of 4-5 years management experience working in a similar restaurant environment as a Restaurant Manager/Chef

Training and support
Training – all Franchisee training runs from one week to a month depending on the concept (Kiosk/Mobile Van/Pods or takeaway) with ongoing to keep abreast with industry standards as applicable and for continuous improvement.
Health & Wellbeing Support – Caribé™ understands the pressures and stress of running a business can bring and as such, as part of our support offering, we can provide periodic health and wellbeing support from an industry wellbeing expert for our Franchisees. If regular ongoing support is needed, this may attract a small cost.
Manuals for all franchisees – This includes operations manuals, HR Handbook, health & safety manuals, prep guide manuals, policies, procedures and more.
Marketing – Experienced marketing support to deliver bespoke marketing plans for each outlet opening and post opening. This also comes with our brand guidelines and do’s and don’ts of using our brand
Legal – We will connect you with our specialist franchise commercial lawyer who deals with all aspects of franchising contracts and legal requirements.
Property search – 3+ property teams on hand to ensure maximum support is available. They will help you negotiate, create the HOT’s in conjunction with our Solicitor and all aspect of getting you into your shop safe and compliant.
Technology Systems – Fantastic back office software to track sales & data real time, accounting software that directly links to the sales of your shop. Providing you with peace of mind and real-time access to the performance of your shop sales, staff timesheet and many more analytics features.
Business Plan Support – We will assist you with key pieces of information that is important for you to use to create your own business plan to help you make your business successful
